THREE TRANSLUCENT PLASTIC SHELL BOWLS, AQUATIC PEWTER MOLDS, METAL TRAY AQUATIC CHOCOLATE MOLDS, LATE 19TH/20TH CENTURY, FOR BERMUDAN PREMIER JOHN SWAN'S VISIT TO PRESIDENT GEORGE H.W. BUSH This collection of aquatic themed molds of varying materials and sizes includes a set of three plastic scallop bowls, crab, fish, shell, lobster, conch lead molds, and two aquatic themed chocolate tray molds. Chef Mesnier used the scallop shaped bowls to form large chocolate seashells that featured decorative white and milk chocolate fish. The aquatic themed dessert was served to John Swan, the Premier of Bermuda, and guests during the George H. W. Bush administration in 1992. See final dessert image. (11) - h:8 w:18.50 in.

Provenance: Private collection of Former White House Pastry Chef Roland Mesnier. First Lady Rosalynn Carter hired Mesnier, who served 26 years under five presidents: Jimmy Carter, Ronald Reagan, George H. W. Bush, Bill Clinton and George W. Bush. According to Creating the Sweet World of White House Desserts: A Pastry Chef's Secrets, Mesnier created stunning desserts for more than 40 queens, kings, princes, princesses and heads of state.
